It is&amp;nbsp; food-friendly and affordable and is a diverse wine in that it can be bone dry or a sweet&amp;nbsp; dessert variety. The wall board is completed, the ceilings are painted  and we are picking out wall colors. Just like our &lt;span style="text-decoration: underline;"&gt;Sunflower &lt;/span&gt;&lt;a href="http://www.sunriselandingbb.com/room-rates.htm"&gt;apartment suite&lt;/a&gt;, the new one will have a full kitchen,  private entrance, and a beautiful view of the lake. It will also boast a luxurious bathroom with a corner garden tub and a  separate tile and glass shower.  If we could just decide on a name, the color selections might be easier. Presently we have the &lt;a href="http://www.sunriselandingbb.com/room-rates.htm"&gt;Rose, Morning Glory, and our Sunflower. &lt;/a&gt;  The  name for our new addition seems to be a toss-up between the &lt;a href="http://aboutflowers.com/flower-a-plant-information-and-photos/meanings-of-flowers.html"&gt;"Forget-me-not" and the "Iris"  The "Lilac Suite" is a close third. &lt;/a&gt;They are all beautiful flowers and have romantic connotations - making the decision difficult. At this point, input from others, especially from our past guests or future guests would be most welcome. In fact, it might help to get the project moving again. But, this first event signals that the season is starting off in high gear.  This week-long event is like a giant wine-trail garage sale.  Participating wineries use this opportunity to clean out their inventory and they drop prices on select items including wine, wine glasses, clothing, gift items, and more. While I usually tinker with recipes and make them my own creation, this one has required very little tinkering. I do change the filling,&amp;nbsp; at times, in order to make it a vegetarian recipe, and there are any number of varieties one can create. One can also substitute evaporated whole milk for the half and half. The following is very close to the&amp;nbsp; recipe which can be found&amp;nbsp; on &lt;a href="http://myrecipes.com/"&gt;MyRecipes.com&lt;/a&gt; .&lt;br /&gt;&lt;br /&gt;1 1/2 - 2 cups diced, cooked ham&lt;br /&gt;1/2 cup chopped, green onion&lt;br /&gt;8 - 10&amp;nbsp; flour tortillas (8 inch works best)&lt;br /&gt;2 cups shredded cheddar cheese, divided&lt;br /&gt;6 large eggs&lt;br /&gt;2 cups half and half&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/4 teaspoon ground red pepper (I leave this out)&lt;br /&gt;&lt;br /&gt;1. Warm tortillas according to directions in microwave or fry pan. Sprinkle ham and chopped onion (or other vegetables) evenly down the center of each tortilla and top with grated cheese. Roll up the tortilla, and place seam side down in 13 X 9 baking dish which has been lightly greased or sprayed with cooking spray.&lt;br /&gt;2. Whisk together eggs and next three ingredients in a large bowl. Pour mixture evenly over tortillas.&lt;br /&gt;3. Cover and chill at least 8 hours. Remove from refrigerator, and let stand 30 minutes at room temperature before baking.&lt;br /&gt;4. Bake, covered, at 350 for 20 minutes; uncover and bake 15 minute. Sprinkle with remaining 3/4 cup cheese. Bake about 5 minutes more or until cheese is melted. Debra Whiting, co-owner of &lt;a href="http://rednewt.com/ww2/"&gt;Red Newt Winery and Bistro,&lt;/a&gt;  has been called an ambassador of the food and wine of the Finger Lakes Region and she was a huge supporter of the Finger Lakes Wine Festival. The green daffodil shoots peeking up in the garden second the motion. And with spring's arrival, many of our guests will be looking for outdoor activities such as hiking. Whether biking or hiking (and even cross-country skiing in the winter), &lt;a href="http://www.keukaoutlettrail.com/"&gt;the Keuka Outlet Trail&lt;/a&gt; is one of the best spots. This strip of land from&lt;a href="http://www.senecalake.org/"&gt; Seneca Lake&lt;/a&gt; to &lt;a href="http://www.keukalake.com/"&gt;Keuka Lake&lt;/a&gt; is also full of history.&lt;br /&gt;&lt;br /&gt;In about mid-nineteenth century, two bodies of water connected the almost 300 foot drop between Seneca and Keuka Lakes. They were the waterway to power mills and the canal for boat traffic.  The flow of water to both were controlled by a dam and guardhouse in Penn Yan. The outlet still carries water from one lake to the next. It was formed by a ground fault in the Tully limestone which allowed the water to run between the two lakes. When hiking or biking the trail, you'll see remnants of the many mills that benefited from the water power. There were gristmills (flour), lumber mills, tool shops, distilleries. By 1835 there were 30 to 40 mills  consisting of tanneries, forges, weavers for cotton and wool cloth, and more.  But, though the years manufacturing in the area declined, and the last water-turbine mill closed in 1968.&lt;br /&gt;&lt;br /&gt;The trail was also formerly a tow-path and later a railroad was built eventually becoming part of the New York Central System. It was called the Corkscrew Railway because of its twists and turns. It operated until 1972, when the tracks were washed out by a flood from Hurricane Agnes.&lt;br /&gt;&lt;br /&gt;Citizens convinced the town of &lt;a href="http://en.wikipedia.org/wiki/Penn_Yan,_New_York"&gt;Penn Yan&lt;/a&gt; to buy the property in 1981 and it has been developed and maintained since by a group called Friends of the Outlet.  The lovely scenery as well as the history make it a wonderful place to hike or bike. It is 7.5 miles long, and partially paved. Trail signs and outhouses were added recently along the route. The first, taking place this weekend (for which we do not have availability) is the Pasta and Wine weekend. The next exciting event -  coming up, after this weekend, is the Chocolate and Wine Weekend February 11 - 13. I recall at one event I attended, a fabulous Chili with dark chocolate included in  the recipe - which was absolutely  "to die for".
